Homemade liqueur that tastes similar to White Vermouth


This liqueur tastes very similar to White Vermouth. It is ideal to offer your guests when serving an appetizer.
Let them decide if it really tastes like White Vermouth.

Yield: 1100 cc (1100 ml/1.1 lt./approx. 37 fl oz)

INGREDIENTS
1 lt. (1000cc) dry white wine (good quality)
1 cup (200gr) sugar
Peel of 2 lemons (without the bitter white pith that's under the peel)
1 peeled and sliced lemon, just the pulp (without the bitter white pith that's under the peel)
3 tablespoons Vodka
1 tablespoon vanilla extract


PREPARATION
In a glass jar with a twist-off lid, pour the wine, the lemon peel, the lemon slices, the vodka and the vanilla extract.

Carefully, close the jar and shake it a little bit.
Refrigerate for 24 hours.

The following day remove it from the refrigerator.
Strain the liqueur with a fine mesh strainer.

Filter it using a funnel lined up with a paper coffee filter or paper towels. Pour the liqueur into the lined up funnel a little at a time.

The filtration process is quite slow, so it can take a little while to finish.

Keep refrigerated and serve chilled.
