50 grams butter or margarine
2 tablespoons flour
4 egg yolks
¼ cup sugar (50 grams)
¾ cup milk (180cc.)
100 grams semisweet chocolate, grated
4 egg whites
2 tablespoons sugar
2 teaspoon vanilla essence
Butter the inside of a soufflé dish and sprinkle with a little sugar, discarding the excess.
Put in a small saucepan, melt butter or margarine.
Put flour and remove. Add sugar, yolks and milk gradually.
Place the mixture over low heat and stir constantly till thickened and bubbly.
Cook and stir for 2 minutes more.
Add chocolate and vanilla essence, stir till melted. Set aside.
Beat egg whites with 2 tablespoons sugar till they are stiff peaks form.
Incorporate half into chocolate mixture in quickly to integrate it and the rest are slow and surround until the mixture is smooth.
Transfer to prepared dish.
Bake in a preheated 350º F – 180º C oven for 25 to 30 minutes or till a knife inserted near center comes out clean.
